First introduced to the "Modern Shudo" way when visiting a brewery in Japan during his travels, Chef Pepe was immediately drawn to how sake brings out the "umami" flavours of food, adding a divine dimension to cuisine from around the world. This discovery eventually set the stage for his culinary creations which are paired with exceptional libations at BAM!
